Happy Birthday Eric!

Eric turned 11 last week! I know, my post is a little late, but I DO have other things to do in my day. We had a pizza party & he had a couple of friends sleep over. I made german pancakes in the morning with sausage & OJ. Adam says that's what he wants for his birthday breakfast (in December). I told him to remind me, because I WILL forget. Funny.



Since Eric is a Boy Scout now he got a multi-purpose tool, sleeping bag & ground cover for camp-outs.



He also got a gift card from one of his friends, he likes that. Then, he can go shopping & buy what he likes.

Eric wanted 'Earthquake cake' for his party. I have to explain.......

For Adam's birthday a few years ago I made a chocolate cake in 8" round pans. I baked it, poked holes in it & poured carmel topping in the holes. I stacked the layers & began frosting it & it FELL APART! I mean I kept loading the frosting on, hoping it would hold it together, but it didn't. It just cracked wide open in about 3 pieces. It looked horrible. I told the kids it looked like there was an earthquake! So, they nicknamed it 'Earthquake cake'. So, I asked Craig what I should do. I couldn't serve this ugly cake to the party guests! So, I made a plain yellow cake (quick)-& kept it in the pan-frosted with chocolate frosting. When given the choice, people wanted the 'Earthquake cake' ! Nobody even ate the yellow cake! It was an ugly cake, but it tasted SO good!
So, this year, I made the 'Earthquake cake' again. Guess what.... I couldn't get it to fall apart! I didn't even frost it very well, because I thought it would eventually fall apart anyway, so I thought 'what's the point?' Well, there you have it...I can't duplicate a mistake even if I wanted to. Hmmm..... How is it that things work out that way? Weird.
Anyway, Eric had a fun birthday & got to play with his friends all day after they stayed the night. So, he was happy.
